Mouthwatering Cilantro Lime Skirt Steak & Chimichurri Sauce

You guys I am absolutely obsessed with this recipe.  This week I am really really trying to eat clean [yes I know I attempt this every week]. In particular I am trying to cut out carbs.  In order to help me stick to my goals, I decided to plan meals with a lot of variety & flavor, gotta cut out the chocolate cravings somehow [okay fine I had a spoonful of dark chocolate chips & almond butter].  I'm pretty sure I could eat this steak every night.  It was so incredibly flavorful & the chimichurri is the perfect compliment. I had a side of asparagus with an amazing yogurt sauce that I will be sharing with you soon & it was a fully satisfying meal.  

I have to tell you my 36 hour diet was almost destroyed tonight when after a day of eating only veggies, I discovered our last propane tank was completely empty. So I had to run to the store & therefore cause a delay in my dinner. The store happens to be Bashas & everywhere I looked there were ads for freshly baked doughnuts. Doughnuts people, my weakness.  Needless to say it was a challenge; however, the thought of the diet coke in the fridge at home kept me going & I decided to sacrifice my water only pledge in order to avert the much larger crisis of large fluffy chocolatey doughnut. Ugh I'm dying even now. 

But really, this steak makes carb-less desirable.

Cilantro-lime Steak Marinade:
Inspired by: Feasting at Home
1 lb skirt steak
1/3 cup soy sauce
1/3 cup olive oil
1 tsp sesame oil
2 limes juiced
3 garlic cloves
handful of cilantro
pinch of sugar
dash of red pepper flakes

1. combine all ingredients in a bowl
2. put steak in ziploc bag, add marinade
3. refrigerate for up to 4 hours, taking steak out of the fridge approximately 30 minutes before grilling to bring to room temp
4. grill steak on medium high to desired doneness [ours was a bit chewy, it is very thin & doesn't need to be cooked long!]

handful parsley
handful cilantro
1/2 cup olive oil
1/2 onion
2 limes juiced
1 clove garlic
1 tsp cumin
1 tsp coriander
1 tsp kosher salt
1/2 jalapeno seeds removed

1. place jalapeno, onion & garlic in food processor & blend until chopped
2. add herbs
3. add rest of ingredients & blend until combined

Time to go make this, seriously it's easy, perfect for summer, doesn't require you to smoke your house up, what else could you ask for?

  5. Looks great! I might try this this weekend. To clarify, you add the garlic cloves to the marinade whole and not minced?
